Zandberg Cabernet Sauvignon 2005

The Cabernet Sauvignon is Zandberg’s flagship wine. Traditional methods are partnered with modern technology where deemed appropriate to produce the best possible result. The terroir in which the cultuvar grows is in close proximity of False Bay on the Stellenbosch Wine Route. In the afternoons, cool sea breezes moderate the temperature of the vineyards allowing slow complex development of fruit. The wine is tentatively open tank fermented and manually punched down to extract the deep fruit flavours and rich colours from the grapes. The open tank fermentation evaporates harsh compounds, making the wine accessible to delicate palates and velvety smooth. The maturation process runs over 24 months in French oak at 15% new oak allowing the wood – fruit integration to be well balanced as a result.

Tasting Notes

On the nose, the slightest hints of mint and eucalyptus partnered with a classic cigar box are found. As it opens up, traces of cassis also become apparent. On the palate, deep blackberry/cherry fruit bursts from a wine nestled on fine tannins. Drink now or mature to excellence in 2 to 3 years.

Food and Wine Pairing:

This wine compliments all quality steak cuts of prime beef and venison. It may also be paired with hearty red meat ragouts, Sunday roasts and enjoys braais or barbeques thoroughly.
